An emulsion is a mixture of two immiscible liquids, such as oil and water, where one liquid is dispersed as tiny droplets within the other. Emulsions are common in many products and processes, including food, cosmetics, pharmaceuticals, and chemical manufacturing. To form a stable emulsion, it is necessary to break one of the liquids into very fine droplets and disperse them evenly throughout the other, often requiring the use of surfactants or mechanical energy.

Ultrasonication promotes emulsification by using high-intensity, low-frequency ultrasound waves to generate intense shear forces within the liquid mixture. These sound waves create cavitation — a phenomenon characterized by minuscule bubbles that form and collapse rapidly — resulting in powerful micro-mixing that breaks down the droplets of the dispersed phase into much smaller sizes. This process leads to the formation of a fine, uniform emulsion with droplets typically in the submicron or nanometer range. Ultrasonication is highly effective in creating stable nano-emulsions without the need for excessive surfactants or energy, making it the preferred method in both laboratory and industrial applications where precision and efficiency are critical.
