Un'emulsione è una miscela di due liquidi immiscibili, come l'olio e l'acqua, in cui un liquido è disperso in minuscole goccioline all'interno dell'altro. Le emulsioni sono comuni in molti prodotti e processi, tra cui quelli alimentari, cosmetici, farmaceutici e chimici. Per formare un'emulsione stabile, è necessario rompere uno dei liquidi in goccioline molto fini e disperderle uniformemente nell'altro, spesso richiedendo l'uso di tensioattivi o di energia meccanica.
L'ultrasonicazione promuove l'emulsionamento utilizzando onde ultrasonore ad alta intensità e bassa frequenza per generare intense forze di taglio all'interno della miscela liquida. Queste onde sonore creano cavitazione - un fenomeno caratterizzato da minuscole bolle che si formano e collassano rapidamente - dando luogo a una potente micro-miscelazione che rompe le goccioline della fase dispersa in dimensioni molto più piccole. Questo processo porta alla formazione di un'emulsione fine e uniforme con gocce tipicamente di dimensioni submicroniche o nanometriche. L'ultrasuonizzazione è altamente efficace nel creare nano-emulsioni stabili senza la necessità di tensioattivi o energia eccessiva, il che la rende il metodo preferito sia in laboratorio che nelle applicazioni industriali dove precisione ed efficienza sono fondamentali.
